I had a great two week vacation in Japan. During my time there I stopped by Takada no Hamono and Nakagawa Kajiya. I bought a petty from Takada-san and even got him to sign the box. Nakagawa-san doesn't have anything for sale in his shop, but he did direct me to one of his more recent shipments at Jikko. I wish I bought a knife before I visited him, but I still got him to sign a bag before leaving. The petty has already been put to work, but the honyaki will stay in the cupboard to salt up for a while until I get the courage to use it.

Merion Forge picked up on BST. Quite heft for its size, needs a slight touch up on the edge. Glides over tomatoes but worked great for cutting protein, maybe a bit too high of grit?

240 TF Nashiji, picked up from RSK on Labor Day. Seemed like a good deal. Was a little nervous since some TF stories are nightmareish but this seems like a good one. F&F is a bit rough for the price - choil and spine are SHARP.

@martinhuber gyuto from his last drop. Debated pulling the trigger but 100% glad I did. A little lighter than what I prefer in this weight range but very nimble and the F&F is fantastic. DHL tested my patience but it was 100% worth it. Thanks Martin!

After about 7 months diving into this hobby I think I’m starting to finally figure out what I like in a knife, still working on figuring out grinds and stuff but at least weight, size, balance are all coming in to place.

Problem is I have 11 230-240 gyutos now 😂
Yea I can understand how having only 11 might be a problem. It's fine though, still got plenty of time for more.

My wife would shoot me. I will say, when we finally have a bigger house, there’s going to be a dedicated knife area lol
Even if you share my preference for being able to see your knifes, not have them buried under other things, a deep, wide drawer can hold a whole bunch of knives (or cleavers).

I'd ask you to ignore the Dalstrong pizza cutter, out of embarrassment, but I've actually grown fond of it.

19 year old Jordan Buckley. Damascus Integral picked up at Epicurean Edge. Unbelievably well made knife for someone at any age.
