Today I received my newest add on to my collection. A Raquin 240 mm Gyuto. Can anyone tell me why it looks like it has a left s-grind almost like its ment for a left-handed user?
In my dealings with them, the choil shot doesn't tell the whole story.

Yeah I thought it was something like that. I can't feel in use so its more of a clarification on why, I've seen some perfectly symmetric grinds too. Im happy either way its just fun to know if its ment to be like that or its simply because of the beauty of handcrafted knives :)

You can check it further up the blade with a straightedge like a credit card. Like others have said, probably just stray hammer marks at the heel masking the geometry further up.

It is actually pretty nice but I don’t see miyazaki discussed anywhere, shame really he does some pretty good work if this is any example of what he is capable of
