Simon Maillet San-mai 235 mm Gyuto - $390 $370 $350 - Just purchased directly from maker about two weeks ago and have not used at all or sharpened. Tip is a little too high for me, so I am going to pass this one on to someone looking to try Maillet's work or add to their collection. Really nice craftsmanship, feels nice in hand, good balance. Should make someone happy.
