First, I am shopping for a Honesuki and Santoku for more robust use, not abuse, that needs some rust resistance at a modest to moderate price point. I'm not interested in Kiwi and similar entry-level options. My one experience with AEBL in a Richmond Gyuto was terrible being super soft, to the point I questioned if it was heat treated. AUS-10, 14CC28N, and similar steels don't seem to be available much.
The JKI Gesshin Uraku Santoku at ~$180 is at the upper limit of what I would like to spend but, does include a Saya so, easily in the $140 range when looking at other options without a Saya. Kanehide Honesuki is SKD "D2" whatever that is (meaning I see it labeled differently everywhere I look it seems). The Yuuraku AEB-L has some references of it being an Ashi Ginga clone but, it seems to be a thinnish laser-style knife. Tunehisa and similar makers might be good options.
So, did I stumble onto a winner with the JKI Gesshin Uraku Santoku?
