Up for grabs are two gyutos that are practically new, never sharpened. Just have to make room. If someone wants to grab both, we can work something out. Need to sell these quick, so hit me up! Let me know if you want more pics/info/videos.

Smedja Aspen 225mm Gyuto

Price: $350 SOLD

Slight S-Grind, thin edge, thicc spine with taper. Very comfortable in hand. Combines the comfort of a workhorse with the edge of a thinner grind. S-grind works, ample food release, especially with taters.

Birgersson Blades 250mm Gyuto

Price: $375 SOLD

Technically a second, there’s a small spot of delamination but that’s about it. Knife cuts perfectly with no issues. 65-66HRC is no joke, this knife is beast, both with the build and the edge. Really wish I can keep this, but I have three workhorses coming in so this knife is redundant.

do you think it could be 52100?
 
The Aspen is sold, but some steel info. Patrik says it’s probably similar to 52100, but with more manganese to manage the hardening process better. Apparently needed for thicker material.
