Gang,
I am here to make some deals. Prices are made to move. $25 off for each multiple purchase. I put the Masashi's on there since I couldn't choose just one and I have a stainless K. Karys k-tip that competes with it for attention. I usually sell a knife if it can't make it through a big sweet potato but these were all going to be keepers, so they all cut pretty dang well and aren't wedgers (except the sicard, it's a laser, laser). I feel I have too many to appreciate them individually and want to dwindle it down to 2 dozen so maybe I can use them more than once every 2 months. If I have the original box, It'll come with it. CONUS and PP G&S. INT'L? $15 USD towards it.

Maker | Type | Trade Value | Blade Material | H | L | Weight | Handle | Pics | Blacksmith | Notes |
Hado Junpako | Gyuto | $300 Sold! | Shirogami 1 - Stainless Clad | 240 | 50 | 182 | Magnolia and Water Buffalo Horn | Yoshikazu Tanaka | I am the 2nd owner but it wasn't overly used. Sharpened once by the owner and touched up by me. Could probably use a sharpening. I was going to rehandle this one, but not, since I am selling. The best cutter I've gotten from Y. Tanaka. This is the mid-weight version (i've seen a 135g one!!!) | |
Hatsukokoro Shirahama | Gyuto | $150 SOLD! | Shirogami 2 - carbon clad | 210 | 48.8 | 176 | Wenge and Buffalo Horn | https://www.epicedge.com/shopexd.asp?id=107594 Pics: | Satoshi Nakagawa | Nakagawa/Morihiro made White 2 210 gyuto wide bevel. What's there to say? Got a good handle for the money. 1st owner, only test cuts, no edgework. I've sanded the handle, spine, and choil and it is SUPER comfortable now. |
Hinokuni | Jumbo Santoku | $115>$100 | Shirogami 1 - Carbon Clad | 240 | 56 | 268 | Oak and Plastic | https://www.districtcutlery.com/hinokuni-jumbo-santoku-240mm/ | Yukihiro Sakai | These can be hit and miss, but this is one of their hits. Everything was well executed and it cuts WELL. Won't get wedged in a big sweet potato but is a really hefty blade. Great price on W#1 that's well done. 1st owner, never sharpened, test cuts only. |
Ikenami Hamono | Gyuto | $245 SOLD! | Aogami 2 - carbon clad | 240 | 52 | 220 | Red Sandalwood and horn | https://knifejapan.com/ikenami-hamono-wa-gyuto-240mm/ Pics https://imgur.com/a/4IcnWjb | Tabata Ikenami | This is a KnifeJapan purchase. I wanted to try a wide bevel from Ikenami. It's a good cutter and good food release. Super clean work. 1st owner, only test cuts. Got it sharpened at Tokushu. |
Kumagoro/Yoshikane | Gyuto | $185 | Takefu V2 - carbon clad | 241 | 48.3 | 215 | Ho wood and horn | https://www.epicedge.com/shopexd.asp?id=84321 https://imgur.com/a/vvrMkWw | Yoshikane Hamono | This guy really punches above its price point. I'll probably regret this one, a little refinement and this would be a world beater. 1st owner, test cuts only. |
Sakai Takayuki Homura Premium | Kengata (Bunka) Gyuto | $500>$475 | Aogami 2 - Carbon Clad | 195 | 48.3 | 230 | Ebony, Silver, and Buffalo Horn | https://nwcutlery.com/product/sakai-takayuki-homura-premium-aogami-2-steel-kengata-gyuto-195mm/ | Itsu Doi | This is a fantastic do-it-all mid-sized kengato gyuto from Itsu Doi in his very well done Blue 2. Another chiseled k-tip. 1st owner, test cuts only. |
Matt Sicard | Santoku | $450>$425 | W2 Honyaki | 195 | 57.6 | 130 | Teak Burl and African Blackwood | https://www.kitchenknifeforums.com/threads/msicardcutlery-x-jla-honyaki-santoku-w2-steel-195mm-65hrc-hand-polish-custom-handle.68621/ | Matt Sicard | This is the first collab between M. Sicard/KasumiJLA. Sicard's HT of W2 is so freaking good. Keeps a stupid edge forever and very reactive. I don't reach for lasers much and this puppy is too sweet to sit on the sidelines. 1st owner |
Masashi | Bunka | $175 Sold!! | SLD - stainless clad | 165 | 49.8 | 135 | Red Ebony Water Buffalo Horn Collar | https://knifewear.com/products/masashi-kokuen-bunka-165mm | Masashi Yamamoto | This knife is what made me fall in love with knives. I got an all horn handle for it with the balance at the pinch. Sharpened once, only owner. |
Masashi | Gyuto | $275>$250 | VS1 - Stainless clad | 240 | 54 | 243 | Chestnut and horn | https://knifewear.com/products/masashi-vs1-kaijin-gyuto-240mm Pics: https://imgur.com/a/yq9QtOZ | Masashi Yamamoto | Masashi's grinds are really well done. You can see the Yoshikane DNA in there but definitely has more style matching that performance. This one is a prep monster that is blade forward but can still do some detail work. This one was tipped but repaired. Original owner only touched edge up . |
Masashi | Gyuto | $350>$325 | SLD - stainless clad | 240 | 52.7 | 251 | Red Ebony and Water Buffalo Horn | https://knifewear.com/products/masashi-kokuen-kiritsuke-gyuto-240mm https://imgur.com/a/jebIw2g | Masashi Yamamoto | These are the freaking bomb. This is one that I waited for and it lived up to the expectations. Tall, nimble, thin with excellent fit and finish. There is some rubbing of the kurouchi finish from the previous owner. Looks like it was around the blade guard judging by the impression. |
Akifusa | Gyuto | $150 Sold! | SRS-15 - stainless clad | 245 | 47 | 216 | Pakka | https://zknives.com/knives/kitchen/ktknv/akifusa/akifusag240.shtml https://imgur.com/a/e5rm6Le | Fantastic J-knife laser. The blade has an great distal taper and hold's an edge forever. SRS-15 is awesome. I am the original owner, sharpened 4-5 times but not aggressively. |
