Anyone used this steel in a kitchen knife? Would be interested to hear the pros and cons, comparisons to other steels and general thoughts regarding it.

The only difference between srs-13 and srs-15 seems to be the content of carbon 1.3 vs 1.5, so should be similar in performance maybe a bit tougher having less carbon.

I haven’t used a knife in it though :)
