I'd like to put forward the Gesshin Uraku in SKD 11 from JKI. I do so with caution as I don't have it but I think the nakiri is great - guess their santoku can't be that different.

It's already $10 over budget and might be a difficult purchase in Europe but you could always post a WTB on BST - you never know your luck.

Depending whether it is for yourself: I don't like much the Misono UX-10 series, and it has all to do with the frankly unpleasant sharpening. A lot of not-knifenerds though do like the bite it offers — even when perfectly dull — and the 180 Santoku has a remarkably elegant design.
