Looking for recs on a tall stainless sujihiki preferably 240 (270 would also work) that I can use on certain days to deal with high volume protein slicing but can also quickly cut herbs or whip out a brunoise and be able to not be babied & sit dirty/wet unattended for a few minutes when things get hectic. I have a few carbons that fit the bill minus the stainless part and some custom 210 line knifes that are too short. Using a Suisin Inox western right now for said task but too short at the heel and have to use an altered high pinch grip to get proper action. Wa or Yo, doesn't matter, something round $200 range. Hattori? Nenox G-Type? Any ideas welcome
