Hello,

The yanagiba is 66 HRC and 300 mm

My current set for double bevel knives are:

JNS 300 Matukusuyama
JNS 1000 Matukusuyama
JNS Aoto Matukusuyama
JNS 6000 Matukusuyama

Do I need something else to muddy effect ? Im a beginner with single bevel knives and still learning how to sharpen that long blade.

Thank you

The JNS set should be great for your single bevel I think.
If I would add some stones to this, it would be for Ura : I don't know jns 1k, but I know 300, 3k and 6k. I won't consider them hard stone, they are more muddy stones. For ura, you may choose a harder set of stones : Jns 300 is not hardest, but it is still hard stone or you could use shapton glass 500, a shapton glass 1k or 2k or a Bester 2k for mid range, shapton glass 4k, shapton glass 6k or 8k for polishing ura. Nano hones are similar to shapton, hard stones, good for ura.

If ura is not grind properly and you need coarser. Or atoma 140 or Debado 180 (being careful to flatten it so it is very flat for your ura).

66 HRC? May I know what brand?
