I'm not even sure I'm ready to let this one go. Munetoshi's shirogami #2 is some of the best I've tried regarding edge retention, creamy on the stones and takes a violent edge. Convex grind for great food release and feels indestructible while cutting prettier than most thinner knives. Good confidence-inspiring heft for a knife it's size, and the tip is thinner than you'd think. I've been moved to grins seeing how fine I could mince a clove of garlic onion-style with the tip. Burnt chestnut D-handle is more comfortable than it looks. Comfy thicker spine at grip.
It took a super fun patina at first but has mellowed to your standard greyish with hints of fun, very stable and won't color food. Garlic turns it super blue though.
