It’s not you, Takeda, it’s me. It’s true, we had one wonderful evening making sweet marinara together. But I’m too old and too slow for you, and I’ll never be able to give you the commitment that you deserve. I found myself thinking about you while watching a kid at Los Tacos No.1 (truly the best tacos in NYC) taking on piles of pollo and adobado, carving up one ingredient after another like Black Mamba taking on the Crazy 88, and that is the kind of chef you need. If I can’t find a home for you on BST, maybe I’ll just give you to the kid for some tacos. You would change his life.
And Hinoura, I just don’t know how to bunka. You sit in the knife block day after day, dressed to the nines, and the only time that I ask you to dance it’s to cut corn off the cob. You’re the work of a legendary knifemaker, and you also deserve better.
The Takeda has been used only once to dice tomatoes. Never sharpened, never stropped. Some of the kasumi has faded a bit from the tomato juice, but otherwise it’s in mint condition. The Hinoura has been sharpened once, and there are some very faint scratches near the tip on one side. Otherwise, it’s in excellent condition.
