I have a maskage koishi for sale… sharper than hell
So the Masakage look too thin behind the edge. The Takeda NAS looks like it would be great for my purposes, the Takefu gang just doesn’t seem practical
I picked up a Takeda Honesuki from TheCooksEdge dot com about a month ago. Love it and highly recommend it; VERY sturdy blade! Check with Adam to see if he's still got one in stock or might be getting a restock.

I got the Moritaka as a place holder. Takeda is thicker behind the edge and has more heel height and length.

Looking for one myself. Couldn't find one either.
I can also vouch for the moritaka being a great option for the honesuki
Ended up getting a Heart brand Santoku, the Moritaka Honesuki will work… thanks all
Keep looking, you’ll find the Takeda eventually. I love mine, took a while for me to find.

That is such a F bummer. I bought both these knives of knifewear cuz I asked a question to them about the Takeda Honesuki while they had 3 in stock and they sold out. Now when the Moritaka and the Takeda “Santoku” arrive it’s suddenly back in stock.
