I am not in a professional kitchen and my budget is around here. I have a 240 and I want to try a new steel / style / maker.If you’re in a professional kitchen that’s tight on space and you have to do a high volume of cutting (prep, etc),it’s gonna be hard to find a better knife for the money

The snow has melted, it's close to waking up with some new shoes and improved feel in hand, just have to get through a little bit more of the "Have To Do" list.My 180 wat pro was one of my favorite knives. @deltaplex has it for safe keeping these days
