Tall 240mm carbon Gyuto Options?

I want a tall (>54mm) Gyuto with carbon core steel (iron or stainless cladding is fine) and a Wa handle.

Matsubara and Shiro Kamo are the ones I know of, but I can't find either in stock currently in a 240mm.

Any other options you guys can offer? Thanks!
 
Tosho will have a tall TxK today at 12:00 Eastern time if you want to try for that. Haven't tried myself but they are generally well liked from my understanding.

 
There’s this Yoake on BST.

CKTG has a tall 240 in the “Kohetsu Blue #2 Nashiji” line.

The Hinokuni “Jumbo Santoku” is in stock at District Cutlery (and I think there’s one in BST somewhere).

If you can find a Masashi that’s a good one.
Yeah I did the see the Kohetsu offering from CKTG as well.

That Yoake on BST is certainly tempting!
 
I came across this Kikumori White 1 that I'm very intrigued by, especially since my current favorite knife is White 1. However, I'm not familiar with the brand. Thoughts?

Sakai Kikumori has a number of various lines with respected smiths and sharpeners. You can think of it like Hitohira or Konosuke, who don't have their own production but instead collaborate with other smiths for their different knives.
 
That Yoake on BST is certainly tempting!
I love Yoake. I didn't mention it because I've owned like 5 of em, and they all had really poor QC. For example, terrible handle installs, tang rust, wildly variable grinds, edge profile issues, etc. I wouldn't recommend to a new user to just grab a random one because it can be a dice roll, especially to someone who isn't familiar with or has the time to correct stuff.

If you have the time to fix them, the Yoake is a killer deal for what you get. Superb steel, extreme taper, plenty of heel height, and comfy spine area. Or maybe get lucky and find one where someone has taken the time to address the problem areas.

Masahi Kobo gyuto are tall.
I'm not sure where they're available at the moment, and the profile isn't for everyone... but they're tall.

Matsubara Aogami #2 Tsuchime Gyuto 24 cm

I have owned several Matsubara knives and have had a couple of these. I am pretty sure these are made by Matsubara.

My Yoake had a blade road and edge bevel that were all over the place. I sent it out for correction, and while it is more even now it doesn’t look so good.

It’s now my J-beater. It powers through mammal.

I have a brand new Sakai Kikumori Nashiji Blue no.2 240mm Gyuto. It's 59+mm tall. I'm going to be putting it on the classifieds next week. If you're interested, shoot me a PM.
