Y.Tanaka Gyuto 228x51mm
Blue#1 Core with Iron Clad
Cedar + buffalo horn octo handle

Catch and release for me. Got it from another member who sharpened couple times on high grit stones, no thinning, and did no sharpening of my own. I wanted to try out a kyuzo grind, but as I suspected, the grind is too thin for my taste. The grind is very well done with a clean shinogi line. Performance is pure laser with almost no cutting resistance. Forward balanced. Profile is comfortable, typical of Sakai knives. Y Tanaka B#1 needs no introduction, one of my favorite steels out there.

The edges around the spine and choil are all nicely beveled for a comfortable feel. The KU is really smooth, so not like what you would find with a Munetoshi or Mazaki. It has a few areas where the KU has rubbed off, which I tried to show more clearly in the video.

$375 shipped & fully insured within US (international PM for details)
