Unfortunately I need some cash and I am moving more and more to cleavers as my main knives, instead of gyutos, so I need to let some things go that I like. This is Mert’s take on the classic Sabatier. This one is chunky at the heel but then thins out quickly and is very thin BTE. Bought it from Mert for $1200. I touched it up on 4K and 6k Shapton glass stones. I may have put it briefly to 1k Shapton briefly but not sure. But basically very lightly sharpened once, originally geometry there. Bought from Mert for $1200 selling for $1025 including shipping, CONUS.

SPECS:
10.2 oz but knife feels very nimble. Balance is right behind the heel where the bolster is transitioning to the heel. I personally love the way the knife feels in hand. It surprises you that it weighs that much, doesn’t feel like it imho.

241 mm x 51mm
5.3 mmout of the handle, about 4.45mm at the heel, 1.85 mm about halfway, keeps going with distal taper about 1.2 mm about 2 inches from tip, 1 cm from tip about .6 mm.

Yeah, I agree. I’m kind of surprised no one is getting this. I would think this would be someone’s absolute joy. With all the love for Sabatier this has all the stuff you would like in a Sab but with so much more, great steel, luxurious fit and finish. I shaved raw chicken with it yesterday, such a joy to use. If it was not for hard times there would be no way I’d sell it. But yet it sits here, is what it is.
 
Price drop $950. If someone has a Takeshi saji cleaver or a mini blue migoto, lasuer cleaver, we can talk about a trade.
 
SBJ, this is one of the most attractive knife I’ve ever see, if I haven’t already emptied my wallet I’d go for it. Seriously, Mert’s work is on par with anyone in and above his price range, no reason Kamon sells in minutes while this sits. GLWS!

I mean if you don’t want a knife that has really excellent food release in the heel end, a laser front half with ultra thin tip, while still remaining sturdy due to monosteel construction, exquisite fit and finish, beautiful warm comfy handle that I’m quite confident would pulverize lemon grass like a pestle without issue (@M1k3). Then you probably shouldn’t buy this knife.

Disclaimer in the front onion. The first two cuts I didn’t use the heel, so I let it fall the blade back into place. But if using the heel this knife definitely has the capable food release to leave a diced onion in its place. The other two onions were actually more together but shifted a little when I scouted them over.
