I have 2 knives for sale from Meat Tansu in the Hunter Valley.

#01 - 210mm Hunter Valley Blades Gyuto, 62mm heel height and stainless. Has only been sharpened once and it near mint. I had a custom made Cocobolo says made for it by Mert.

#02 - 170mm Tansu Boning Knife - custom made. Beautiful custom saya, very little use.

Steel: SG2 core with stainless damascus
Weight (g): 108 (no saya)
Length-heel to tip (mm): 170
