An effective sharpening session.
Tonight I sharpened 5 rather different knives. Several different alloys, knives included both monosteel and clad blades. Symetrical edges and single bevels.
Hitachi white steel #2. S35VN PM steel. 8Cr13MoV. A proprietary "semi stainless" alloy. See picture-
I used the same two man made water stones plus brief stropping on unloaded copier paper for all, a couple got a single pass per side on a fine diamond rod as well. All these knives shaved my arm hairs cleanly after this fairly short sharpening session.
I used a Shapton glass 2X thick 500 grit stone with circular out & back strokes for the knives which needed their edges re profiled or minor nicks/chips ground out. All the knives were then finished on a Suehiro 3000 water stone, ending with alternate edge leading strokes & lighter pressure each time, then given a couple of edge trailing strokes on used copier paper followed by a couple more per side on human skin (my left forearm!), edges then checked by slicing copier paper & shaving arm hairs, adjusted for "bite" after this if needed.
A couple got one light edge leading stroke on each side over a fine diamond steel followed by an additional single edge trailing stroke per side on used copy paper to ensure enough "bite" if they wanted to skate over a fingernail/didn't immediately bite into calloused parts of my finger tips with minimal pressure. They all now will immediately bite into a tomato, pepper or ME.
Im'a take apart a deer with some of these shortly, I hope.
