Hi yall, I haven’t been around for a minute, mostly because of the knife I want to discuss.
Quite a few years back now I bought a 270mm 52100 KS profile custom knife from Mert Tansu, it’s one of his earlier custom works. This knife solved a lot of problems for me both in that I needed a large guyto for work at the time and later when I was having some very bad tennis elbow issues using exclusively this knife helped alleviate the injury. This has been my main squeeze for at least four or five years and is literally the last knife I bought. This is the one that along with a custom Heiji ended my search for a great chefs knife and ended my BST addiction.
However, after 27 years of life in kitchens I’ve hung up my clogs. Since April my best girl has just been hanging out in my work bag because I don’t really use a knife that big to cook for myself. This is a knife to cut 200 pounds of onions, not two. Should I sell this knife and pay some bills in much need of paying or hold on to it? I don’t even know what Merts custom work goes for nowadays. So greater knife enthusiast world, let me know what you think!

I am glad the knife served you well , in case you want to sell it you can reach me for an estimate or options to refinish the knife for the possible next owner

Personally I would keep it and grab something from his more affordable HVB line....I would call them more "rustic" but I don't think that is even fair since they have great fit and finish...not sure how I can really differentiate them from Mert's normal stuff since they are also in house. Maybe just less fancy?

I do pretty much 100% of my home cooking with my other keeper knife, a little 220mm Heiji. I really only use knives bigger than that in a pro setting and my exit from that world is pretty final. I’m simultaneously sentimentally attached to the knife but would rather it get used instead of hanging out in my work bag with my fish scalers and other tools that I don’t really need at home.
