No idea the type but a little lemon juice, and some hot sauce and they’re great.
If you were buying oysters online, where would you get them? The store bought ones make me nervous since you realllly don’t know how they’ve been handled

If you want more west coast style oysters, I've always had great experiences with Taylor Shellfish. I like that they offer a couple different species. Kumamotos are delicious

Ordered some Chesapeake Bay oysters recently from Little Wicomico Oyster Co. Briny and meaty. Came in super clean on the outside and made me ditch the prep brushing for the first batch that I shucked. Just a quick hand rinse.I love oysters. Grew up I’m MD by the Chesapeake Bay eating lots of seafood. I never paid much attention to the varieties though. Just try whatever is available. Moved to NC 26 years ago and I tend to find a lot of pea crabs in my oysters which is fine, but freaks a lot of people
I think Wegmans actually gets them direct from the farms. The problem is what day were they delivered and how long have they been in the store. I know some of the ones I got were fresh that day or the day before. Certain varieties are $1.50 and others $1.00. Most of what I see comes from Maryland/Virginia or NC which is where I am.Maybe this is privilege talking, but the fish dealers I’ve talked to say to never eat the $1 oysters (this is not the Gulf Coast, mind you). They sell at wholesale for $1-$1.25 when fresh, so any retail place doing $1 oysters is getting the stuff that was on the verge of being thrown out.

I tell you what. The big boy at the bottom of the bowl had a hinge that grew up and over and that knife made it easy and saved the day. No other oyster knife I have owned would have done that. I didn’t get a pic, but the bottom shell grew up and curled over the top and back down onto it. Seemed crazy impossible, but this design worked.I see you flexing that KnifeJapan errster knife
Your oyster knife looks much like many others to me. What makes it work better than a common one, such as Toadfish or Dexter Russel?I tell you what. Thanks for the explanation!Also most are much shorter blades with stubby handles. This gives much nicer leverage, yet not needed as much since the pointy tip and design almost pop them open on its own.

Mud worm, on high magnification. Tiny, string-like. Looks like algae next to an oyster. Oyster parasite that bores on oyster shells. Harmless to humans.
