Here're a few photos documenting my J-knife collecting journey spanning a decade. Fascinating looking back to where it began, and where it stands. Started with a scattershot approach, which shaped my tastes/preferences.
All my knives get used—some more than others—a bunch have left the stable along the way. The 2013 kit if perfectly fine for kitchen requirements, but I needed more. Times have changed since a lot since 2013—lots of new blacksmiths, more access to makers that weren’t available back then, Kato gyutos could be had for around $500, my lefty Misono UX10 seemed like a major splurge. My first carbon was the Masamoto HC, which I'd like to dust off, sharpen, and take it for a run.
