Bought all mazaki knives from knives and stones at May 2020. Use gyuto and sujihiki three weeks at sushi bar and sharpen 6 times, never thin the knife and never change the geometry. The petty only cut one orange but never sharpen. The origin price for gyuto is $383, for sujihiki is $379, for petty is $201
Bought Mizuno from JCK, at December 2020, use one day at sushi bar, sharpen once but I mess up the front part of the knife, the Original price is $597
