For sale Toyama stainless clad 270 gyuto

Blue2 steel with stainless cladding
Edge lenght 273mm
Heel height 60mm
Weight 238gr
Ho Wood d-shape handle with horn ferrule
Comes with original box

I bought this last year from JNS. I have Watanabe 270 gyuto too and decide to let the Toyama go. I have sharpened the knife 2 times and stropped few times with Kitayama, no thinning. Great knife, no need to say more about Toyama. I paid 650$ for the knife and I would like to get 490$ plus shipping, the knife is located in EU. Mainly looking for $ but for the sake of hobby you can throw some trade ideas too 😊. Core steel has some patina and I can remove it if the buyer wants that.

I have to say I'm amazed by your answer. I'm seriously considering switching to Android and now One+ in particular. I heard Huaweis take good photos too but they are banned in the states.
I dont know much about phones or taking photos but I think that playing with the light you can get different kind of results and sometimes cheap phone can capture a good photo too👌

just got the 270 from JNS, but don’t have a Watanabe Gyuto - just curious, is it worth me getting a Watanabe if I already have 240 and 270 Toyoma?

Just go for it and if they are too alike, sell the one you like less.

Are those both with stainless cladding? My Watanabe is iron clad, it is a bit heavier than the Toyama and more blade heavy and they feel different in hand when cutting. Wats goes thru food basically its own weight and Toyama is more nimble. Otherwise my Toyama and Wat are very similar, just a little bit difference with the grind. So they do overlapse quite a bit but if you can get iron clad, why not 😊

i have 2 Blue stainless clad Toyama 240 and 270

and 2 blue Damascus Toyama - 240 and 270

am intrigued by soft iron clad Wat - Perhaps that’s the way to go
 
@RockyBasel and others on this thread... how do you guys describe the balance on Toyama 270 and 240s (and 210s?) compared to other long workhorse-ish gyutos?
