Selling these 3 wonderful knives to make some room in my collection for knives on the way.
Toyama Damascus 240 Gyuto
Specs: 241 mm x 55 mm
Weight: 243 g
True workhorse that is hefty yet cuts well, beautiful damascus in Toyama's famous blue #2. I gave it a gray kasumi finish which has some patina on it now.

Tsubaya Y. Tanaka 270 Gyuto
Specs: 259 mm x 53 mm
Weight: 208 g
270 kurouchi gyuto made by Yoshikazu Tanaka's famous Blue #1.
It came with a large secondary bevel that made it thicker than what the choil suggested. So I thinned it on a JNS300 and then NP800.
Now it cuts like a demon, insanely thin behind the edge. The profile has a large flat spot and is very suitable for push or pull cutting. Think of it like a 270 Yoshikane in Blue #1.
Changed the Tsubaya Yew Handle to a nicer Hitohira mono walnut handle

Classic laser, the secondary bevel is a bit thick and it wedged on some carrots so I sent it for thinning, now it cuts medium carrots and apples silently.
There are many vertical scratches and patina on the blade so I'll sell it at a discount.
