Hey folks. Happy Monday. Wat ya gonna do, Wat ya gonna do, Wat ya gonna due when you are stuck at home? Sell some knives, I guess. I got a little too long Watanabe blades and need to sell 2-3 of the 4 I'm posting here. My plan is to sell 2-3 of these and keep the remaining, depending on which ones go first. All the knives have been used a couple times and touched up but no major thinning or sharpening, and are ready to rock. Three of the four are from the "Specials" page and thus have unique or upgraded features. See below for some details. Ping me for more information or specific asks.

    1. 250mm damascus gyuto, White 2. This is still shown on his website and is such a nice knife he used it in his recent print brochure. It's gorgeous. See choil shot - great convex grind, really nicely done. Specs from his website here and below. Paid $937 at the time based on exchange and shipping. Asking $825 CONUS/$845 Int'l.
    #11 Kintaro-ame Gyuto knife 250mm: Walnut.
Total length 415mm, blade 250mm, width 57mm, thickness 4 - 1.4mm, double bevel, material Kintaroame white.
Octagonal shaped walnut handle with black dyed phenolic-impregnated maple hilt.
    Extra pictures A, B
    Price: JPY96,000

    2. SOLD Special Super Nakiri - 220mm length, height 69mm, 318 grams (!!), balance by the kanji farthest from the handle. It's iron clad blue 2, with a grind that has some s-grinding is going on, but from the forged geometry finish. Overall, not the most beautiful knife, but it literally falls through food and release is A+. Handle is burnt chestnut octogonal.$467 originally, asking $400 CONUS/$425 Int'l. See choil shot for idea on grind. SOLD

    3. SOLD White 2/Iron Clad nakiri, 180mm. This is from the specials page. #10 Kurouchi Nakiri knife 180mm: White Octagonal shaped Mai puum wood handle with 2 brass and ebony ring.
JPY46,000 - paid $434, asking $350 CONUS/$370 Int'l. The handle on this is pretty nice compared to many of his others. Great food release, and love the heat treat on his White 2. SOLD

    4. WITHDRAWN - keeping "Classic" 180mm nakiri. Blue 2/stainless clad. Octo Ho handle with horn. Runs a little short, 174mm by my measurements. Asking $340 CONUS/$360 Int'l. WITHDRAWN

That big nakiri seems like a lot of fun, though I also like the look of that almost full height grind on the gyuto. GLWS.

Yeah that big nakiri is a fun knife.

@thebradleycrew is the "classic" nakiri stainless clad or iron clad?

Not to speak for op, but a Wat classic nakiri would be stainless clad...

Always thought his damascus rivalled Mizunos for the nicest done...glws.

@CiderBear - it's actually iron clad. One of the "good ole" iron clad Blue 2's...I was the one putting "classic" on it.

From what I can see in the pictures the one with the ho and horn handle looks like stainless clad, which is how they have been for many years AFAIK. I could be wrong but looking at the cladding line it definitely looks like the stainless clad.

I stand corrected - the ho/horn is stainless clad, not iron clad. My apologies. I checked the cladding and did a small test. I'm updating the post. That said, all three other knives are iron clad.

When I emailed Sin looking for a certain height on the standard blue 240 he suggested that exact dammy white gyuto. I ended up passing due to it being out of my price range and not exactly what I was looking for at the moment but that thing is gorgeous. If I had the money I would give it a shot. GLWS! Someone is going to be happy!

Yeah, my comment was only on that specific nakiri. I have the same and it's one of the best knives I have used either way.

What’s the weight of your gyuto? How flat is its profile?

Yeah, fwiw I'm no fan of stainless clad anything but this is one of the best...I'd overrule myself if looking for a nakiri.

Marcelo - the gyuto is 281 grams, 57mm at the heel, spot on at 250mm for blade and OAL is 415mm. Profile is fairly flat, but not nakiri like. If you like a little curve, this is great as-is. If you like flatter, I'd probably take 0.3mm or so off during sharpening and make it perfectly flat for a long section of blade. In my view, it's in a good place to suit either user depending on preferences.

Someday I‘ll try the Wat ‘classic’ nakiri. Can’t quite make it work atm. Yours looks lovely! Someone will be super happy with it, I imagine.

Hey folks, I'm going to mark this thread sold, a create a single, new posting for the Wat 250 gyuto! It's still available but gets lost amongst all the other Watanabe goodness on this post.
