Watanabe has ceased the regular production of carbon clad knives. I was/am looking for the same knife in 240 but thought I’d give this 270 a shot as he had one left. I think I’d be better off with something a little more nimble as a home cook. I’m really tempted to keep and use it but I thought I’d see if I could trade it for something a little better suited for my purposes, first. Trade considerations: - same knife configuration and condition in 240mm - I’d like to try a Kato Gyuto; either a Workhorse 210 or Standard 210 or 240. I know a Kato will have a higher market value, so I’d add an appropriate amount of cash. Trade value is about $500 after shipping and fees from Watanabe. I’m not offering this trade to try and turn a profit on this knife. I will note that I’ve been looking for a KU 240 for a little while (here and elsewhere) and they have really dried up; along with the rest of the carbon clad Watanabes and Toyamas, since the switch to stainless clad.
