There isn’t room for the both of us in my kitchen... a true cow sword - brand new in box; neither sharpened nor test-cut. Just as received from Watanabe. This is a beast. 306 grams. 274mm heel-to-tip. 58.6mm height at heel. Kurouchi finished carbon-clad blue 2 core; Ho wood handle with buffalo horn hilt.

Watanabe has ceased the regular production of carbon clad knives. I was/am looking for the same knife in 240 but thought I’d give this 270 a shot as he had one left. I think I’d be better off with something a little more nimble as a home cook. I’m really tempted to keep and use it but I thought I’d see if I could trade it for something a little better suited for my purposes, first.

    Trade considerations:
    - same knife configuration and condition in 240mm
    - I’d like to try a Kato Gyuto; either a Workhorse 210 or Standard 210 or 240. I know a Kato will have a higher market value, so I’d add an appropriate amount of cash.

Trade value is about $500 after shipping and fees from Watanabe. I’m not offering this trade to try and turn a profit on this knife. I will note that I’ve been looking for a KU 240 for a little while (here and elsewhere) and they have really dried up; along with the rest of the carbon clad Watanabes and Toyamas, since the switch to stainless clad.

    Pm me. Thanks KKF.

Updated choil shots. Still available for trade. Would consider Kato gyuto, Watanabe 240 KU gyuto, or Raquin KT gyuto.

*with trade values adjusted accordingly either way.

I did have a 270mm wat in this weight class before. If this one was suitable for a lefty I would be all over it. The hefty blade+wat grind does all the work for you, basically you touch food and it splits in 2.

I gotta start collecting 240’s just for bait. Even though I’ll never use them.
