Does anyone know if Watanabe take orders for the pro gyuto line but with kurouchi finish instead of migaki? Or if he take orders for iron-clad gyutos anymore?

I'm planning to make an email asking him but first I want to ask more from members who have ordered from his website.

I saw a KU version of a Toyama on Zahocho recently and I realized I like the aesthetics of the stainless clad kurouchi way more than migaki.

Looks thicker, but I don't mind. I have an older iron-clad Toyama that is still very smooth with carrots.

I'm just not keen on the stainless clad and patina edge look, it's either fill carbon clad or full stainless for me.

I cant answer your question specifically, but what I can say is that I have in the last several months ordered 3 knives from Watanabe. He takes a few days to return his emails, but he is courteous and helpful. What I was most impressed with was that by email I was told that it would be several months before my knives would be available. What I was pleasantly surprised at was the email I received just a few weeks later that said my knives were shipped. Amazing knives, amazing service. I'll buy again.

I asked him and was told no more iron clad blue steel anymore. He may do an iron clad white gyuto as I purchased an iron clad white steel nakiri last year.

Just a note that the kuro finish on this iron clad is very different to the stainless clad version I had previously. The stainless version was very smooth and even compared to the iron clad kuro.

I asked him last week and he said there are no options with Iron Clad, had you luck with ordering yours ?
