I am not sure if this is appropriate place for this question so if an admin needs to move it I understand.

I have a question about placing orders on the Watanabe website. I have followed the promps to send an email to try and order a Pro 180 nakiri and a 210 gyuto. They both appear to be in stock.

The email said to expect a 10 bussiness day wait. If you dont get a response in 10 days, to try and email using a different email address?

I waited 3 weeks the first time with no response. Used my work Gmail and have waitied another 3 weeks. Still no resonse.

Am I doing this correctly? How do you place an order with Watanabe?


I would also be interested in a Toyama 180 is anyone knows where one of those could be had.

I've ordered 4 or 5 directly, I recall that 1 took a couple emails - the others went smooth. Need to know what you want to include blade, handle instructions and communicate that so he can quote you a price and time.
 
I'm receiving an order right now. You have to be patient. And since the mail replies are so slow don't rely that much if an item is in stock, when he answers it could be sold. The site it's not updated in real time.
 
I emailed him a few weeks ago and he replied me in a week. He said he no longer makes the pro nakiri though and directs me to the special/custom made knife section of his web site. Does any of you have luck buying the pro 180mm nakiri?

Ironically enough I woke up this morning to an email from Shinichi. To Plantgainz point, items listed "in stock" were not available. Also, fwiw, the Pro Nakkiri is no longer available.

I am now looking at an iron clad l, white #2 or a stainless clad, blue steel, thinner grind, more like a Toyama.

Decisions decisions...

What do you Nakkiri pros think?

I wonder if this is due to Toyama's retirement... 🤔
 
Like others said, once you get the first response things progress pretty smoothly. Just make sure you know what you want, to keep the back and forth to a minimum. At best with a link from his own website.

Most people like his Blue, same as Toyama - so I would go with that ;)
For the Wat Pro I think there is one on BST? Probably your best bet if you don't want to swap to something else.
Or you could try asking on Zahocho, sometimes they show up there, too.
