What i got for 10 euro's and what i would like to know

Hi all,

Here is what 10 euro's on the 'Marktplaats' website bought me. The ad didn't come with any accurate descriptions so it was bit of a gamble and i expected most of it to be crap, which it is. Couldn't resist the urge to buy the lot and find out what the rest was though.

From left to right:
-Diamant Sabatier stainless. Handle completely ruined (more on that one later)
-Chinese santoku. Not that bad, dislike the plastic handle though.
-Lion Sabatier stainless with a big chip near the crop.
-Three knives 'Rosenbaum'. Interesting, these are listed on Reddit, Chowhound and the KnivesAndTools website as the epitome of a cheap chinese knockoff. https://www.knivesandtools.com/en/ct/how-good-is-your-knife.htm It's not hard to see why. The chef's is 3mm thick and stays that way to about 1cm form the edge. The post about them on Reddit is priceless, starts with a guy showing the set he bought for $300 and gradually finds out he's been had.
-Chinese made Henckel's boner, good condition
-Knife with wooden oval handle, states 'made in Japan' tip slightly bent (oh-ow)
-Filletting knife that as far as i can see could be a vintage Henckels, has a little metal insert in a wooden handle. (is it?)
-Ikea Slitbar knife. Don't know what type they called this one. The slitbar series had a somewhat loose iterpretation of knife styles, but imo was the best knives IKEA ever sold, their new 365 line has terrible finish. For the slitbar series I somehow always had some fondness though.
-Four knives only marked 'titanium'
-one piece of unidentified cutlery.

My questions for you:
Can you identify the Kanji?

I'm thinking of restoring the 25cm Sabatier for myself. I've been wanting to try rehandling a western knife for a while. The construction of the bolter seems strange to me. It is a different kind of metal that seems to be neither steel nor aluminium. Any tips on how to get it to look decent again, or is it beyond help?

Notice that the bolster is not the same piece of metal as the handle.

Funny thing, last night i told my nephew he could pick one for himself. Immediately goes for.... the rosenbaum. Turns out his dad just ruined his moms new vivo chef's knife by banging it through a chicken thigh.
 
German ebay is so full of such grab bags, you can't step anywhere in the cookware categories without getting a supermarket house brand meat slicer stuck in your foot.
 
In the mean time i fixed up the maybe real maybe fak J-knife. Steel seems pretty soft. Sharpens real easy (too easy?). In any case its sharp now, it's real light, the wife likes it and blade, bolster and handle won't come apart again this lifetime. Still waiting on your verdict on the Kanji though. The big french knife turns out to have a cast aluminium bolster that doesn't fit that well as you can see in the pictures. Bought some hardwood doorhandle screws in messing and some fine abrasives. All set for the rehhandling.
 
From the Kanji, probably a Seki-Ryu. Inexpensive line of 420J2 in traditional shapes, selling for 15-30 Euro new.
 
If the wife likes one one of them they were a bargain!
 
Kanji definitely a match. They don't seem to make this particular model anymore though. Thanks for the info!
