I am looking at a knife that has a Jura wood handle. What is Jura wood? I Google it and can find nothing.

Just speculating... There is a company based in the Jura Mountains called Jurawood. 🤔
See jurawood.fr\

Edit: I note that Knifewear describe the Shibata Koetetsu R2 range as: "Wa (Japanese) Handle - Octagon Jarrah Wood with Pakka Collar" so perhaps @dehory's guess is on the money... (and @McMan later)

Or is it juma? Synthetic handle material? Maybe show us a pic of it.

The red color is indicative of Jarrah. I have garden furniture made out of this wood because it is both hard and very moisture resistant, so it doesn't rot. That is pretty much the same color (as much as one can judge color from a photograph).
