What knife/knives to buy when in Japan?

I'm from Canada, but planning to go to Japan very soon and will have the ability to travel all over the country (yes I'm aware of current difficulties with getting through the border).

What knife or knives should I look at getting in Japan? Are there knives that are only available to buy in Japan, or are significantly more affordable in Japan (compared to Canada)?

Separately, do you have any suggestions for places a knife-interested person should go? Any workshops that do tours, etc, that you know of?

Kind of depends what you’re looking for. Just one man’s view but I’d probably stop by Teruyasu Fujiwara and bring home a few special pieces, if available and offered. If looking to unicorn hunt I’m sure others could chime in. Is this for a gift?

It's for me, not for a gift. I have 3 Japanese knives right now (240mm gyuto from Kurosaki Makoto, 180mm cheap damascus/hammered VG10 gyuto, and 210mm from Masashi Yamamoto), but as I'm going to Japan soon I thought it would be nice to get one or more knives that are either hard to get in Canada or much cheaper in Japan.

I'm willing to go to any part of Japan as I'll be around the country anyway.

Is it kitchen knives only, or are you also looking for Japanese-made field-knives?

I'm just a home cook so I cook my own meals, which can be anything.

Don't have any field knives, but if there was an affordable one I could grab it...
 
Most knives should be more affordable in Japan than in Canada, Kappabashi is street for specifically kitchen stuffs, tho many of the stuffs are geared more towards tourist. You can visit some of the famous vendors like Tsubaya, Morihei or Miura, they have some nice and unique stuff.
