What will you spend $1000 on?

    Assume up market Gyuto is the play area (>/= $300 per knife) & you have a budget of $1,000 to spend on Gyutos. How will you do it?

    > Three knives in $300 range each?
    > Two knives in $500 range each?
    > Or spend it on one special knife?

    Please also share what & why.

    Probably two knives.

    One at lower value, mazaki 240mm, 313usd @ carbon.

    Rest on kamon. 687$ will be enough, right? :D

    Edit. Two knives beat one, but three wouldn't beat these two.

    Really depends non what you have. Most of what I like and don't have is in the 500-1000 range so making it two would be impossible. Might do a special 6-700 knife + ordering a Heiji to try

    Sorry bahama, just had to pull your leg for a sec there.

    $1k, eh? I'd buy a plane ticket to visit one of my many favorite knife makers and hang out for a couple days. Maybe make a knife with that maker. Then come back here and post pics of said knife in another overly repetitive thread about "show your newest knife" thingy.
    I think that would be pretty darn rad

    I had to google that. Amazing! I’m now changing my answer to 3 knives. One of each micro plane cheese knives.

    Keeping all the ones I already have? Then probably one really really nice one, 220 range so it can do whatever. Maybe from someone I would never had a chance to try Xerxes or Halcyon etc.

    If it's for my entire set? Then 3 knives: a nice petty 5" ~ $150. a short-ish 180mm tall-ish thing like a bunka, maybe Shibata $250. A really nice 250mm+ gyoto for the other $600, that can buy a lot of knife. (an alternative is just to get a 270mm mazaki and some stones to maintain it all, and a bottle of something nice)

    I would spend the 1k plus a little extra on a decent belt grinder and start making my own knives :)

    I would buy multiple knives. Spend it on a gyuto, petty and suji or chinese cleaver or go usuba, deba, and yanagiba. Might be tough to stretch for the single bevels since Im left handed tho. Probably go kochi or more gesshin gingas or try something from shihan or raquin. I like to use the things I have and feel like I would baby too much a single $1000 knife and not use it.

    I have enough knives (my most recent buy is from today). I’d buy a ticket to Tokyo and eat at Jiro‘s.
