I found and ordered some at 'oerboer Maarten' the Mangalica I tasted so far was Superb....
price point for a mix is 65 euro for 5 kg. I'll report back once it arrives and is degustated.
Interesting! Mind sharing some pictures of the raw products?

Time to make sausage again. This time, Mexican chorizo.

Used here for linguine carbonara con chorizo. Basically carbonara with chorizo instead of guanciale. The chorizo gets fried with some finely chopped garlic and rosemary and served with a poached egg.

We had some friends visiting from New Jersey and they insisted on me making them my homemade pizza. Tried a new biga dough recipe and it came out really good... I made Margherita and sausage and mushrooms versions. Having a lot of fun with this!
