What's in your bag?

Hi folks I’m looking into getting a roll and am split between the Hardt Edge Slim XL or Edge Slim.

Would love to hear from people who own either one of those knife bags and hope they could give me their two cents on how they feel.

For instance, is the edge slim iteration feel too compact for you? Do you find that the knives you typically use are shorter than what the edge slim XL is designed to accommodate?

Thanks!

I've neither of the rolls you cite.

Will offer that my bag(s) typically carry more tools than knives and suggest you include your "stuff" in your plans.

Good luck.

:Kunz Spoon
:155mm Tojiro DP Petty
:Mac Superior 270 mm Bread knife
:Fujiwara 270mm FKM Gyuto
: Masakagi Yuki 240mm Gyuto
:Napa Style 5" Santoku(My line knife
: Shi Ba Zi 8" Vegetable Cleaver
:Makoto 240mm Ryusei Gyuto

:Faberware kitchen shears
:Ceramic rod from CKTG.
As far as the knife roll, it was something I got off of Amazon for about $32, waxed canvas.

I have had many other Japanese knives, but have traded or sold them to others. I am not a collector or an enthusiast, these are the knives I use to make a living feeding people. They all have scratches, and have had nicks in the blades. They are all razor sharp.

These are my babies.

A while after my last post on here, I now work full time in a kitchen and my knives have changed quite a bit. I carry a lot of the tools and knives I don't use on a daily basis I a roll, and that roll sits in a larger bag that also holds my most commonly used knives and tools. In the first pic, from left to right starting in the roll: Wakui white #2 stainless clad hammered kurouchi finish 240, Kohetsu AS 180 bunka, Yahiko nashiji ginsan 210, unknown 180 deba (feels like white steel), Tojiro bread knife, Kuhn paring knife. In my everyday use knives currently are a Kanehide PS60 270 suji, Yoshimi Kato AS nashiji 240, Tsunehisa AUS10 240, and a Tojiro DP 150 petty.
May I ask what bag is that? I mean the bigger one.

Our daughter sewed the bag out of 4 kitchen towels. Works great and can be washed:

Funny, those blue towels look exactly like operating room towels 😂

I have the same petty and it’s the only knife my wife will use 😂 (despite me giving her a much nicer knife)

Posted here before but my bag setup has changed. Now using a drum stick bag. Super efficient and has a good look to it. And pretty cheap. Werkens brand
Highly recommend and I’ve tried and sold or gave away just about every chef knife roll option out there!
Single bevels are heavy use and very functional and I don’t care that they’re all beat and ugly. Other knives are Dalman Merion Tansu Kippington Antzenberger Knot currently . I swap out gyutos and nakiris every couple weeks.

I think that’s the same bag as the one I got and posted in another thread a couple years back. And yes, I 100% agree that drumstick bags make perfect knife bags

Well here you go then. Eight knives, 2 of which are in wooden sayas. Blade lengths range from 220mm to 245mm.When I zip it shut I place a towel in the middle to help keep the handles from bumping and rubbing up against one another

How tall is your cleaver? Can it easily fit in drum stick bag. It's hard to find a cool looking bag that hold cleavers over 100mm.

The one in the photo is only 90mm fits perfect. I have a larger one at 108mm height but sadly it doesn’t fit in any of the pockets. I usually just set that one in the middle and zip it up when I have it with me.

Still putting my bag together but I'll update when it's in a good spot. On that note, still trying to find a good bag! Got my eye on a pretty slick drum stick holder but not quite sure if its the *right* one.

I can highly recommend Horace and jasper canvas bag from knifewear or sharp knife shop. Holds 8 blades, compact and light weight. Great quality and price. Multiple colors. I have the green and a black one too. I am currently running their leather bag. When I was using their canvas I had custom straps canibalized from old backpacks, straps and buckles seen in pic. Was sick set up quick access. Fits in a backpack too. No shoulder strap which I like because it gets in the way in the kitchen.

You can also run this bag with the honing rod tucked in above the flap so you can run 8 blades plus a rod! For 9 slots. Tones of options bro
