Don’t see antique shops much around here, closest thing is charity shopsHere in the US I have had very good luck at flea markets and roadside antique marts. Not for Japanese steel, but there is plenty of vintage American, English, German, French, Chinese carbon etc to be found. But I haven't had a chance to go antiquing down under so I don't know if they really helps you.
