I definitely suggest considering whetstones from Burrfection. Challenging prices. I recently purchased this for travel. With %25 discount. You can use the box as stone holder. Quite happy with it. I didn't see them anywhere else. I can not say anything about knives though.

In Canada, I have bought knives from:

KnifeWear - this one has been mentioned a lot.
TheCooksEdge - some high-end stuff here.
SharpKnifeShop - newer shop with a growing selection.
PaulsFinest - great prices. Limited Japanese knife selection, but a large selection of sharpening supplies at good prices. My favourite place to buy stones.

I have not seen makers that sell directly being mentioned - would that be of interest too?

Most of my purchases have been Japanese Knife Imports.

A few things from Japanese Natural Stones and Japanese Chef Knives.

Also my end grain BoardSmith board gets more use in my kitchen than anything else.
