Wide-bevel choice: Kikuchiyo vs Kakegiyo

    These seem more alike than not. Both are wide-bevel white Sakai gyuto with nice attention to detail.

    Kikuchiyo
    Kagekiyo

    The Kagekiyo is a little smaller and lighter, but I've held the Kikuchiyo and it was not a monster by any means. Thickness seems to be about the same, but I don't know if one knife has more distal taper than the other.

    The saya that comes with the Kagekiyo would just go in a drawer, so it's not a factor in the decision.

    Has anyone used both? I'm curious to hear opinions.

    I haven't seen the Kagekiyo, but the Kikuchiyo is a little bit short on the heel. Does anyone know who is Kikuchiyo? I think Hitohira like to nickname a bunch of their knife maker.
