The winter squash ("pumpkins" to you in Oz & some other places) are finishing up.
These two varieties are quite sweet with fairly dry flesh (Uncle Dave's Dakota Dessert Squash, Ukranian squash).
I've liked oven roasting the Uncle Dave's squash tossed with a bit of olive oil, shallots, garlic, fresh sage & thyme. They only need salt and pepper, no sugar is required. If you keep them all winter, by Spring they are INCREDIBLY sweet and even better flavored.
This is the first time I've grown the Ukranian squash (the orange/pink ones), have not cooked them yet- But the growers describe them similarly, plus, one reported having kept them stored on a shelf, still good to eat over 2 years!

I've had several really good squash soups, squash ravioli and squash based curry from restaurants...
