These are knives that I've been spending some time to flatten the bevel.
I tried to put a quick Kasumi on it. It's certainly not perfect but I hope that it demonstrates the foundation.
All prices are excluding the shipping fee, which is around 25 euros for EU countries and 45 euros elsewhere.
Shigeki Tanaka B2 K-tip Gyuto 180. Asking 100€
This is actually my first Japanese knife.
I'd like to think that I maintain it well. I changed the handle, polished the choil and spine, and flatten the bevel.
Some ku on the left side is worn off.
Matsubara W1 Bunka 185. Asking SOLD100€
I think this is a good representation of W1 steel. Very tall like all Matsubara knives.
Yoshimitsu Kajiya W2 Gyutohiki 220. Asking 125€
Iron-cladded kurouchi, really fun to polish.
There's a typical overgrind at the heel on the right side and I think there's no point to remove too much steel.
More pictures will follow.
