Wanted to try out the profile so I went with a knife that has a good steel and grind. I have used it light but found the profile doesn’t suit me completely, though it performs well in slicing duties and volume prep. Edge hasn’t been touched other than a loaded strop, happy to put a fresh edge on free of charge.

I paid $800 AUD ($580USD) with shipping from JCK, they are now $958 AUD ($695USD) from the same retailer.

Got this knife in an trade here on KKF, really admire the fit and finish on this piece but it’s too similar to my other Y. Tanaka gyuto which I unfortunately prefer. Been sharpened once and used lightly at home, otherwise it’s just been admired. I hate for knives to sit there so it’s got to go.

K&S Sakai Takayuki Ginsan gyuto 240


Purchased this knife here on KKF, has been thinned and sharpened a few times and used a fair bit at work. Not in pristine condition, has been loved, scratched and such. More of a thick workhorse, if you like some weight in a gyuto this is pretty damn good option, with the benefit of a really nice core steel and profile. Lately I have been moving to more thin knives so this one has been benched, needs a new home.
