Actually I was never planning to keep this knife and just got it to make a handle for it so this is a real catch and release.

The blade is made from Slovenian OC100 steel which should be very similar to white #2. From what I have heard the heat treat is very good, hard and fine grained and reasonably easy to sharpen (this is true!). The blade was polished before I got it but the choil wasn‘t rounded. I eased it a bit and of course managed to slip a bit leaving a small scratch near the heel 🤦🏻‍♂️.
The knife is quite laserish but still feels substantial enough to not have to be babied. The knife isn’t completely sharpened right now, the future owner can choose if he wants to do it himself or if I should do it (including possible scratches on my weaker right hand side 😁). Edited because this is no longer true

The handle is made from smoke tree and elk antler with a spacer made from red vulcanized fiber. I thought a western handle would fit this blade well and am quite happy with the end result. The handle is finished with tung oil and installed using hot glue so it should be easily removable for polishing or to swap it for something else.

Let’s try 600€ 550€ 500€ 400€ including shipping to the EU, UK and US (and maybe others too but I will have to check prices). That’s pretty much what I have in it having traded two natural stones for the blade and a few hours of labour into the handle.
I‘m also open to hear reasonable offers or trade proposals for western made Gyutos around 200mm or shorter (only carbon steel, the more rustic the better)

More detailed specs will follow on Sunday as I am out of town until then. What I know is that the edge length is 265mm and the spine above the heel is about 2.5mm.

Bump.
The knife is sharp now as I figured maybe some of you would like to know how it acts on stones and how it cuts. At least I want to know 😊
It sharpened up really easily on a JNS 1k. I was able to form a burr in less than a minute on the stone. Deburring was equally easy and didn’t take more than a few strops on the stone to get it to cleanly shave hair and cut paper without ripping it.
I refined a bit on a Dalmore blue natural stone and tried it on a few grapes. It is quite sharp now and bites the board on some spots but there is of course room for improvement, my sharpening skills are nothing extraordinary.

I will prep tomorrow’s dinner with it and do some cutting videos so stay tuned.

Bump with the promised videos, bad technique included 😊

This is really a fun knife and cuts like crazy. Food release is nothing to write home about but ok for a laser like that.

Let’s also drop the price a bit to 575€ obo to compensate for the steel that I removed 😁.

Edit: if any prospective buyer wants me to rework the handle or make another one that’s more traditional, we can of course talk about that.
