Got a few knives here that aren't seeing the use they deserve. All three are available for sale or trade!
On the trade side, I'm especially looking for long (250mm+, the longer the better) reactive gyutos with interesting or WH grinds, interesting finishes/cladding/core steels, or makers I haven't tried (especially Marko, Kip, HF, and most of the Swedes), but I'm open to other stuff too.
Since I know folks are coming from a lot of different time zones, I'll wait at least 24hr after posting before accepting any offers, and if I get multiple offers at asking price I'll pick randomly. All prices include CONUS shipping, and I'll knock off $10 per knife if you buy more than one. I'm happy to take more pictures or answer questions on request.
First up: a Sugimoto 4030 cleaver: 190x92, 316gm, Sugimoto mystery stainlessmonosteel (AFAIK). $200$150.
Used for a few meals at home, this one just didn't click for me--the big-belly profile doesn't really work for my cutting style. Touched up the edge on synths to see if that helped, but no, it's the profile. Includes one of my felt "cozy sayas" for a bit of knife hygge as winter approaches.
Next, Jiro #057, a 240 gyuto: 243x50, 258gm, Shirogami/White #1 with reactive KU cladding.$600$550.
This knife has a ton of soul, and I'm still not certain I want to let it go, but honestly this one is just too small for me. Originally paid $700 for this at Strata last year (slightly discounted due to a small delam near the heel on the right face--I haven't managed to get a good picture of it yet, but I'll keep trying). @ian and I have removed some metal from this one, after which @ian put a nice kasumi on it with uchi fingerstones, so this is not in new condition, but it still cuts like a dream and looks great. A small area of KU on the left face near the heel was scuffed and restored with gun blue. Includes the original box with Strata stock label and the hand-written certificate from Jiro-san. The choil shot is a bit deceiving as Jiro puts super-thick tangs on his knives; I'd put this one on the heavy side of middleweight, with a nice convex grind down to a very thin edge.
Finally, a Watanabe 270 gyuto, 274x59, 252gm. Aogami/Blue #2 core with stainless cladding.$450$400.
Watanabe's reputation is well deserved--this is an awesome middleweight with a great profile, grind, and edge. I just like my Akebono better in this class. Used for a few meals--still has Watanabe's (very good) edge, but the core has picked up a bit of patina. Ships in the original Watanabe box with shop label. The handle is ho/magnolia and feels rough--I've left it alone since I expect the buyer will rehandle it anyway, but if you keep this one you'll probably want to soak and sand it at least. It's also a weirdly asymmetric shape that might feel weird for a lefty. The ferrule does fit flush and still has the all-important sticker
