That knife has great balance and the grind is excellent (I bought the twin at the same time).

So true Jack...and at prices higher than this one. COVID has much to do with this I suspect. Took me a while to sell my Doi Dragon at a significantly reduced price. Those used to walk unaided. No worries...its a keeper for sure. I will probably withdraw it this weekend if its still here.

Unfortunately as an executive chef at a casino, doesnt look like I will be working past next week.

I am retired and I have the twin of this knife but, it took me three years to get lucky and find it. At 76 years old Kato San won't be in the knife business much longer and I know that I'm not selling mine it will be passed down to the family.

I won't be passing anything of mine down to immediate family - they will probably end up in a dishwasher. If my grandkids do learn to respect them fine, otherwise my knives are going to friends who I know will use and care for them. ;)

Yes I understand that and I only pass on knives that will be appreciated and cared for. I have given my 21 year old granddaughter a 180mm Watanabe Pro Nakiri because she's a vegetarian and a Hasegawa cutting board to keep the edge stable. I made the mistake of giving maple end grain cutting boards to family only to have one of them end up in the dishwasher, I won't make that mistake again.
 
More to the point of this posting I have several high end knives and they will go to those people that appreciate them. This Kato 240mm KU Gyuto is a master made product that will hopefully go down through generations in the family.
