Yoshikane Hammered SKD 180mm Santoku

Really impressed with this santoku, which led to my subsequent Yoshi purchase. This knife has been stropped but never sharpened, and there is some patina starting to form on the cladding. Has a magnolia wood handle.

Nihei Nashiji SLD 165mm Bunka

After reading positive reviews from forum members about this knife, I jumped on it when Carbon Knife Co restocked it. Fit and finish are excellent, and the mirror polish on the blade road is very well done (see pic). Unfortunately after preparing two meals with it, I realized that I preferred a thinner spine for a bunka (comparing this to my Shibata Kotetsu). Blade hasn't been sharpened or stropped and looks like it did new out of the box. The chestnut handle arrived quite dry, so I applied a mix of mineral oil and bees wax to protect it.

That yoshi is a wild profile, idk how I feel about it, but it looks glorious regardless. GLWS!
 
Somebody gonna be stoked. Got my Yoshi 180 Santo on Monday and I'm pretty blown away; absolutely phenomenal cutter, even with OOTB edge.

I don't like flat profiles on gyutos, but it works on this little guy. It's great for tapping like a nakiri, but it has a tip and you can rock it bit 😍 I don't see this one leaving the rack anytime soon... unless it's to go to work
