Hi KKF, putting up some mid-tier Sanjo knives for sale.

  1. Yoshimi Kato "Echizen" 210mm Gyuto - $250 SOLD
  • Blade composition is Aogami Super with stainless kurouchi cladding.
  • Handle is 130mm. Octagonal cherry with black horn ferrule.
  • Cutting Edge Length is 215mm
  • Height at Heel is 48mm
Fun fact: this is the knife that Carmy gives to Tina in "The Bear". To be clear, this specific one wasn't on the show, it's just from the same line. Original owner, purchased from ProTooling. Used a couple times, never even touched a strop though.

2. Yu Kurosaki "Raijin" 120mm Petty - $200

  • Blade composition is Cobalt Special Steel with stainless cladding, so fully stainless.
  • Handle is 115mm. Octagonal oak with black pakka ferrule and turquoise spacer.
  • Cutting Edge Length is 120mm
  • Height at Heel is 30mm
This was my first ever Petty, and I like it, but like my Yoshikane Petty more, so this one can go. I know Kurosaki doesn't get much love around here, but this little guy's pretty nice. A bit taller than your standard petty, but not so tall that it feels awkward in hand. Original owner, purchased from MyGoodKnife. Just as above, this one's been used a few times, but hasn't ever even touched a strop, and it's screaming sharp.

3. Kochi 240mm Gyuto - $250

  • Blade composition is V2 with soft iron cladding, so fully reactive.
  • Handle is 142mm. Octagonal burnt chestnut with black horn ferrule.
  • Cutting Edge Length is 241mm
  • Height at Heel is 52mm
"Kochi" is a line exclusive to JKI. While the identity of the blacksmith making these for them is technically undisclosed, it's pretty widely agreed upon that these are made by Wakui, and this one certainly has all your typical Wakui specs. This one originally belonged to @tostadas, and eventually made itself to me through two other owners. I only used it for test cuts before realizing it isn't quite to my liking, but it's been used and sharpened by previous owners.

I'm open to any reasonable offers, and if you buy all three, I'll take a whole $100 off the top. Two, I'll take $50 off the top.
