How I wish there was any outlet even close to this in my neck of the woods.
I don't remember if this has been posted, but I came across this whole series of videos of local cooking in Europe. Very intimate and interesting peek at life there regarding traditional home cooking.

Every one of these I watch I say damn I wanna move there and live their life haha. This is a modern one, interesting how the people on an island in Ireland are picking up on the food technology (traditional and modern) of the island of Japan.

My thought is he’s working on the cross-sectional profile (thinning) first and then tuning the edge profile once he’s addressed the overall cutting geometry.
