    Media ugliest. knife. ever.

Agreed, but totally and completely useless for left handers!

They missed out on the upgrade version that my mother in law bought me... the adjustable fiddlebow!

    Zanmai availability in Europe?

I hear you on the price increases. I got a left handed 180mm Gyuto, and I have to say it cuts well OOTB. The edge isn't exactly what I'd call refined (very visible scratch pattern), but very serviceable. A quick trip over a loaded strop has had a positive result. There's a very obvious left hand...

    Gesshin (400, 2000, 6000) and JNS (800, 6000) stone "shootout"

That's a great attitude. I love the fact that you have so much confidence in your products.

Looking for a new knife, classic Rapala style blade

I tend to think of Puukkos as being more like this, but I've no idea why. I was under the impression it was kind of a traditional Finnish general-purpose-belt-knife style rather than a filleting style.

    Zanmai availability in Europe?

I have a small Gyuto on the way. I've never taken a choil shot, but I'll give it a go when it hits the doormat. Sadly they don't list the Nakiris, but I've heard good things about the grinds so I figured it was worth a shot. Worst case my Padwan sushi chef (aka no.1 son) will give it some...

    Zanmai availability in Europe?

Thanks Tom, ever the gentleman. I think Japansemessen has me covered this time. Of course, you could bear me in mind if you happen to wander into anywhere that sells 1 micron diamond spray... :D

    Zanmai availability in Europe?

Hi, I hope this is appropriate - please move/delete if not. I fancy giving the Zanmai PRA left handed knife range a go, but I'm struggling to find any stockists in Europe, or that will ship to Europe. A couple of places have their higher end stuff available, but so far nothing for us lefties...

Deep Secrets: Making the Perfect Fry

I pride myself on my fries (they're called 'chips' here :D ). They are why I have a gut and man-boobs. I sometimes cook mine three times, adding a final dunk in very hot oil to get them crisp. I mostly use Maris Pipers; Idahos aren't common around these parts. I thought I'd tried most ways...

    Sharpening Expectations

The last time somebody asked me to sharpen a knife for them I took one look at it and then offered to buy them a new knife. It was the only way... :D I'm no sharpening guru, but I do ok most of the time. Around here, that probably puts me in the bottom 50%. In the world at large, I'm probably...
