Tanaka, shigeki Tanaka, he makes a variety of blades from the very cheap to the very expensive. His lower end stuff is affordable enough for it to not scare a younger me and his higher end stuff would still be unicorn territory for the current me. His blades are also exceptional.
White #1 , crazy simple carbon steel, sharpens in seconds, forms a burr in no time and takes a beautiful edge. Basically it's the easiest to sharpen and keeps an edge fairly well.
Zdp-189 is a pain but by pain I just mean they take longer to sharpen, hap40 isn't as bad I put it in line with r2. If you want cheap and good I'd look at Japanese chef knife but sort by Western handle. You can get a good 240mm blade shipped ems for sub $200 usd. The other option if your just...
Given you budget you have a lot of options. Sukenari from James or Japanese chef knife would be a good bet, hap40 or zdp 189 will hold an edge for a long time. If you can find one a Takamura hana suji would also be stunning.
