I recently got a Tesshu 240 in white 2 and I love it. At first I thought it wedged a bit, but it only really happens on sweet potatoes and I was comparing to my other knives which are mostly lasers. Love the weight of it, heavy enough to do work, but not too heavy.

See... That makes me nervous. All that work and it is still up for sale and now looks like crap.

I have a beston 500 that removes metal pretty quickly. I've tried basic thinning a few times and think I'm starting to get the hang of it. Maybe just work it awhile on the beston? I'm afraid of using that stone because it removes so much.

Yea. I see what you are saying. I don't have a belt sander and I feel like the amount of work required for a blade this thick would be huge. I will try and remember to record some cutting for better feedback. Is there anyone on this forum who will take a knife like this and grind and refine...

So how do I guarantee getting a thicker blade with good performance? Is it just kind of a crap shoot?

So I ordered a Tesshu and I have to say I'm a bit disappointed. It looks gorgeous and has great fit and finish and I sharpened to shaving sharp in a couple minutes, but it doesn't cut anywhere near as well as my lasers. It is really thin near the edge too, so I don't feel like I got a lemon...
